Sweet Pepper and Onion Beef Stir-Fry
- 2 pounds Lean Sirloin Steak Cuts
- 1 whole Fresh Red Bell Pepper
- 1 whole Fresh Green Bell Pepper
- 1 whole Sweet Yellow Onion, Chopped
- 2 cloves Minced Fresh Garlic
- 32 ounces, fluid Beef Stock (I Use Kitchen Basics)
- 1/2 cups Cold Water
- 3 Tablespoons Cornstarch
- Olive Oil
- Hi yall!
- First, slice sirloin steak cuts into good-sized chunks.
- Also chop pepper rustically.
- In a large skillet, brown meat in a drizzle of good olive oil.
- Remove meat and drizzle a teaspoon or so more of olive oil.
- Add the peppers, onion and garlic and increase the heat, as we want to keep the peppers firm, but we also want to sort of blister them in the high heat.
- Remove peppers from pan and deglaze pan with good chug of beef stock.
- In a separate mixing bowl, wisk the cold water and cornstarch together until blended.
- When beef stock is bubbly in the pan, add the cornstarch mixture.
- Whisk until gravy becomes thicker.
- Add all beef and peppers back in and coat in the stir-fry sauce.
- I serve this with buttered white rice and it is glorious!
- I have also used steamed broccoli and it is soo very good!
