Hot Crawfish Dip Recipe
- 1 pound crawfish, peeled, cooked, minced
- 3 ribs celery, minced
- 1 bell pepper, minced
- 1 med. onion, minced
- 4 toes garlic, minced
- 3/4 stick butter
- 1 (7 ounce.) jar pimento, minced
- 1 can cream of mushroom soup
- 1 1/2 sm. can pet lowfat milk
- 1 tbsp. lemon juice
- 1 tbsp. cooking sherry (to taste)
- 1/2 pound Cheddar cheese, grated
- 4 dashes LA warm sauce
- 4 dashes Lea & Perrins
- Salt & black pepper to taste
- In butter, saute/fry celery, bell pepper, onion and garlic till tender.
- Add in pimento, soup, lowfat milk and cheese and seasonings.
- Simmer on low 15 min.
- Add in crawfish, lemon juice and sherry.
- Place in chafing dish over low heat to keep hot.
- Serve with Escort crackers.
