Brian Shaw's Mom's Spinach Souffle
- 1 (10 ounce) package frozen spinach
- 8 ounces sharp cheddar cheese, the block kind
- 14 ounces cottage cheese
- 3 eggs
- 2 tablespoons butter
- Ritz cracker
- Defrost the spinach and squeeze out as much moisture as possible.
- Try to squeeze it some more -- 1 is a really important step.
- Crack eggs in separate dish and slightly beat.
- Chop cheddar into cubes about 1 inch or smaller.
- Combine all ingredients except crackers in mixer or food processor.
- Turn mixture into a lightly greased casserole dish.
- Top with cracker crumbs, you might not have to use a whole sleeve.
- Bake in 350F oven for one hour.
- Enjoy!
