Fluffy Nagaimo Yam and Tofu Gratin

  1. Grate the yam.
  2. Wrap the tofu with a paper towel and microwave for 1 minute to remove the moisture.
  3. Combine the grated yam with the tofu from Step 2 and mash.
  4. Mix in the beaten egg.
  5. Flavor with mentsuyu.
  6. Top with cheese and keep your eye on it as it bakes for 20 minutes in a 200C oven.
