Simple Chicken-Quinoa Supper

  1. Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast.
  2. Refrigerate until ready to use.
  3. Bring broth to boil in medium saucepan on medium-high heat.
  4. Stir in quinoa.
  5. Return to boil; cover.
  6. Simmer on medium-low heat 10 to 15 min.
  7. or until quinoa is tender and liquid is absorbed.
  8. Cool.
  9. Meanwhile, heat barbecue to medium heat.
  10. Remove chicken from marinade; discard marinade.
  11. Grill chicken 12 to 15 min.
  12. or until done (170 degrees F), turning after 7 min.
  13. Mix remaining dressing and lime juice until blended.
  14. Add to quinoa, peppers, onions and cilantro in large bowl; mix lightly.
  15. Serve with chicken.
