Shrimp and Spinach Pasta

  1. Cook fettuccine.
  2. While water is preparing to boil, put olive oil in a pan and add shallots.
  3. Saute for 30 seconds.
  4. Add shrimp and cook for 3 minutes.
  5. (Dont overdo this.
  6. Overcooked shrimp are just BAD.)
  7. Add chicken broth, lemon, and salt.
  8. Bring just to a boil.
  9. Add cooked fettuccine (the noodles should be done, since they only need to cook for about 3 minutes) and toss.
  10. Add spinach and toss, just until wilted.
  11. Serve.
  12. You can add things like toasted pine nuts, roasted red peppers, or chopped tomatoes.
  13. I added petite diced tomatoes, drained.
  14. Ooh, I just thought of artichoke heartsthose would be good, too.
  15. You could also add mushrooms, parmesan, feta, whatever!
  16. Garlic.
  17. Mmm.
