Shrimp and Spinach Pasta
- 1 pound Peeled, Deveined Shrimp
- 1/2 cups Chopped Shallots
- 3 Tablespoons Olive Oil
- 3/4 cups Chicken Broth
- 1 whole Lemon, Juiced
- 1 teaspoon Salt
- 1 package Lemon Chive Fettucine, Cooked Al Dente
- 10 ounces, weight Fresh Spinach, Washed And Coarsely Chopped
- Cook fettuccine.
- While water is preparing to boil, put olive oil in a pan and add shallots.
- Saute for 30 seconds.
- Add shrimp and cook for 3 minutes.
- (Dont overdo this.
- Overcooked shrimp are just BAD.)
- Add chicken broth, lemon, and salt.
- Bring just to a boil.
- Add cooked fettuccine (the noodles should be done, since they only need to cook for about 3 minutes) and toss.
- Add spinach and toss, just until wilted.
- Serve.
- You can add things like toasted pine nuts, roasted red peppers, or chopped tomatoes.
- I added petite diced tomatoes, drained.
- Ooh, I just thought of artichoke heartsthose would be good, too.
- You could also add mushrooms, parmesan, feta, whatever!
- Garlic.
- Mmm.
