Crispy Parmesan Turkey

  1. Heat oven to 200 degrees F. In a pie plate, combine breadcrumbs, Parmesan, parsley, and lemon zest.
  2. In another pie plate, beat egg with 1 tablespoon water.
  3. Lightly pound turkey cutlets until they're 1/8 inch thick.
  4. Season on both sides with salt and pepper.
  5. Dip cutlets in beaten egg, then in breadcrumb mixture.
  6. Heat 2 tablespoons of the oil in a large nonstick skillet over medium heat.
  7. Add 2 cutlets and cook about 4 minutes per side, until golden brown and cooked through.
  8. Place on a baking sheet and put in oven to keep warm.
  9. Repeat with remaining oil and cutlets.
  10. Serve with lemon wedges.
