Turkey Bayou Burgers
- 1 lb. ground turkey
- 2 scallions (3-inches left on), thinly sliced
- 1 red bell pepper, cored, seeded and finely chopped
- 1 tsp. garlic, garlic
- 2 tbsp. cilantro, chopped
- 3/4 tsp. dried thyme
- 1/2 tsp. ground cumin
- 1/2 tsp. paprika
- Red pepper flakes, to taste
- Salt, to taste
- Black pepper, to taste
- 4 hamburger buns, toasted
- 1/4 cup mayonnaise-type dressing, for garnish (optional)
- 1 small, ripe avacado, sliced, for garnish (optional)
- Prepare hot coals for grilling.
- Place the ground turkey in a bowl and mix well with the scallions, bell pepper, garlic, cilantro and spices.
- Season to taste with salt and pepper.
- Gently form into 4 patties.
- Grill patties over hot coals, 3" from heat, for about 5-6 minutes per side.
- If desired, spread buns with mayonnaise-type dressing and top burgers with avacado slices.
- Serve immediately.
