Mushrooms Florentine

  1. Blanch spinach until tender; rinse and add seasonings.
  2. Layer spinach mixture in 6 casserole dishes.
  3. Arrange 8 pieces of mushrooms on top of spinach.
  4. Bake 5 minutes at 450F.
  5. Top with Swiss cheese and put under broiler until browned.
  6. Garnish with tomato rose or stuffed tomato.
