Mushrooms Florentine
- 12 lg. mushrooms, cut and quartered
- 1 lb. spinach, blanched and stemmed
- 1 tbsp. finely chopped garlic
- 1/2 tsp. white pepper
- 1/2 tsp. seasoned salt
- 2 tbsp. butter, melted
- 1 cup Swiss cheese, shredded
- Hollandaise sauce
- Blanch spinach until tender; rinse and add seasonings.
- Layer spinach mixture in 6 casserole dishes.
- Arrange 8 pieces of mushrooms on top of spinach.
- Bake 5 minutes at 450F.
- Top with Swiss cheese and put under broiler until browned.
- Garnish with tomato rose or stuffed tomato.
