Char Siu Pork Tortillas
- 500 g pork fillets, thinly sliced
- 240 g char siu sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon vegetable oil
- 250 g mini tortillas
- 2 green spring onions, thinly sliced
- 1 carrot, cut into matchsticks
- 1 red capsicum, thinly sliced
- 10 toothpicks
- Place the pork and sauces in a medium bowl; toss to coat; cover and refrigerate for 2 hours, or overnight; drain the pork, reserving the marinade.
- Heat the oil in a hot wok; add the pork in two batches; stir-fry for 5 minutes or until it is just cooked through; remove from the wok and cover to keep warm while cooking the second batch.
- Place the reserved marinade in a small saucepan; bring to the boil and gently simmer for 5 minutes; remove from the heat and cover to keep warm.
- Heat tortillas according to the packet directions; divide the pork among the tortillas; top with onions, carrot and capsicum; roll up tightly to enclose the filling; secure with a toothpick.
- Serve the tortillas with the warm marinade as a dipping sauce.
- NOTE: Char siu is a sweet and rich Chinese barbecue sauce.
