Lentil Burgers
- 400g can brown lentils, rinsed, drained and lightly mashed
- 1 cup fresh breadcrumbs
- 1/3 cup corn kernels
- 1/3 cup finely chopped red capsicum
- 1/4 cup Italian parsley, chopped
- 1/4 cup self raising flour
- 2 eggs
- 2 spring onions, sliced
- 1 tablespoon VEGEMITE
- 8 bread rolls
- mixed lettuce
- sliced tomato
- 8 KRAFT Light Singles Target 2 For $5.00 thru 02/06
- Combine first 9 ingredients in a bowl.
- Divide mixture into 8 burgers (about 7cm diameter).
- Heat some oil in a non-stick frying pan over a medium heat.
- Cook burgers on both sides until golden brown and cooked through.
- Repeat with remaining mixture.
- Serve either hot or cold in a bread roll with some lettuce, tomato and a cheese slice.
