Festive turkey stuffing
- 150 g cranberries
- 150 g cashew nuts
- 2 mandarines
- 6 sausages
- 100 g bacon
- 1 sprig fresh rosemary
- 1 tsp. tarragon
- 2 salad onions
- 1 stick celery
- 1 pinch grated nutmeg
- 2 cups breadcrumbs
- 500 ml cider
- to taste salt and pepper
- Get all the ingredients together
- Shred the bacon, celery and onion in a food processor.
- Put in a large pan over a low heat for 10 minutes, stirring now and again to prevent sticking
- Add the cranberries, herbs and cider.
- Turn the heat up and when it starts to simmer, leave at moderate until the liquid has reduced by half
- Roughly chop the cashew nuts, extract the sausage meat and discard the skins and put in a bowl with the breadcrumbs
- Squeeze the juice from one mandarine and add to the bowl together with the segments of the other mandarine
- Once the liquid has reduced like this, turn the heat off
- Add the pan's contents to the bowl and mix well
- Store in the fridge or freezer in an airtight container
- Or, if you are ready to cook your turkey, start stuffing right away :-)
