Festive turkey stuffing

  1. Get all the ingredients together
  2. Shred the bacon, celery and onion in a food processor.
  3. Put in a large pan over a low heat for 10 minutes, stirring now and again to prevent sticking
  4. Add the cranberries, herbs and cider.
  5. Turn the heat up and when it starts to simmer, leave at moderate until the liquid has reduced by half
  6. Roughly chop the cashew nuts, extract the sausage meat and discard the skins and put in a bowl with the breadcrumbs
  7. Squeeze the juice from one mandarine and add to the bowl together with the segments of the other mandarine
  8. Once the liquid has reduced like this, turn the heat off
  9. Add the pan's contents to the bowl and mix well
  10. Store in the fridge or freezer in an airtight container
  11. Or, if you are ready to cook your turkey, start stuffing right away :-)
  12. Enjoy!
