Gazpaccho Extremeno
- 2 green peppers
- 2 garlic cloves
- 1 teaspoon salt
- 3 slices bread, soaked
- 1 orange, peeled, finely chopped
- 3 eggs
- 2 tablespoons sherry wine vinegar
- 5 tablespoons olive oil
- 6 ounces water, ice cold
- 1 cup crouton, toasted
- Process the green peppers, garlic, and salt.
- Add bread and orange.
- Add the eggs.
- Add sherry wine vinegar and oil.
- Add water; blend until smooth.
- Top with croutons.
