No Bake Blueberry Cheesecake

  1. To make crust, mix crumbs, sugar, margarine and lemon rind.
  2. Press on a 9 in pie plate.
  3. Chill.
  4. For the filling, beat cream cheese and sugar until light & well blended.
  5. Meanwhile, dissolve unflavored gelatin in milk over low heat & add to cream cheese while still hot.
  6. Continue beating to blend well.
  7. In a separate bowl, whip cream untill stiff & fold into cream cheese mixture.
  8. Pour onto crumb - lined pan.
  9. Top with blueberries in syrup & chill for 4-6 hours.
