Basil Pasta with Chicken
- 4 pieces Chicken Breast, Cooked And Diced
- 1 box (14-16 Ounce) Pasta, Cooked As Directed (I Use Penne)
- 2 Tablespoons Olive Oil
- 3 cloves Garlic, Minced
- 1 container Fresh Mushrooms, Sliced (Small Container)
- 1 whole Onion, Diced
- 1 can Cream Of Chicken Soup (standard Size Can)
- 1 can Chicken Broth (standard Size Can)
- 12 whole Fresh Basil Leaves, Chopped
- 1 teaspoon Dried Oregano
- 12 whole Cherry Tomatoes
- 1/4 cups Freshly Grated Parmesan Cheese
- Cook chicken breast; cool and dice, set aside.
- Prepare pasta as directed on box.
- While pasta is cooking, heat olive oil in skillet.
- Add minced garlic, sliced mushrooms and chopped onion until barely tender.
- Add soup and broth.
- Bring to boil.
- Pour sauce mixture over drained pasta in a casserole dish.
- Add chopped basil leaves, oregano and tomatoes.
- Top with grated Parmesan.
- Put under broiler for 5 or so minutes to add color to the top of the casserole.
