Coconut Rice

  1. Heat oil and butter in medium sized heavy bottomed saucepan over medium heat.
  2. Add onion and garlic.
  3. Cook until translucent, not browned.
  4. Add drained rice and stir to coat well with butter / oil in pan.
  5. add in rest of ingredients and bring to boil over med heat.
  6. Reduce to low and simmer with lid ON for 20 minutes.
  7. Do not stir rice while cooking.
  8. Turn off and let sit 5 minutes.
  9. Fluff with fork and serve.
