Barbecued Alligator Tail Recipe
- 4 x Alligator tail steaks - (abt 3/4" thick) Lowfat milk for marinade
- 1/2 tsp Freshly-grnd black pepper
- 1/4 tsp Cayenne pepper
- 1 Tbsp. Rosemary Red pepper flakes Salt to taste Extra virgin olive oil for brushing
- Place lowfat milk in a deep bowl, add in pepper flakes and rosemary.
- Season meat with black and cayenne peppers.
- Place meat in the bowl, add in lowfat milk as needed to cover.
- Let marinate 3 to 4 hrs.
- Remove meat from marinade, discarding marinade.
- Pat the meat dry.
- Re-season the meat, if you like, with black and red peppers.
- Add in salt to taste, if you like.
- Brush meat with extra virgin olive oil to reduce sticking, and grill over warm coals, or possibly over medium heat in a gas grill for about 10 min each side, brushing with oil again when turning.
- This recipe yields 4 servings.
