Hearty Legumes And Beef Soup Recipe
- 6 c. water
- 1/2 c. dry red kidney beans
- 1/2 c. dry green split peas
- 1/3 c. uncooked reg. long grain rice
- 1/2 lb. lean beef boneless round steak
- 1 med. onion minced about 1/2 c.
- 2 tbsp. vegetable oil
- 1 can (16 ounce.) whole tomatoes undrained
- 3/4 teaspoon salt
- Heat water and beans in dutch oven until boiling.
- Boil 2 min remove from heat.
- Cover and let stand 1 hour.
- Heat water and beans to boil, reduce heat, cover and simmer 1 hour.
- Don't boil or possibly beans will burst.
- Add in peas and rice.
- Heat to boiling; reduce heat, cover and simmer about 20 min or possibly till beans and rice are tender.
- Trim fat from beef, cut into 1/2 cubes.
- Cook onion in oil in 10 inch skillet over medium heat, stirring frequently, till tender.
- Add in beef, brown well.
- Place meat, onions, tomatoes and salt into Dutch oven with other ingredients.
- Simmer 1 to 2 hrs till beef is tender.
