Hearty Legumes And Beef Soup Recipe

  1. Heat water and beans in dutch oven until boiling.
  2. Boil 2 min remove from heat.
  3. Cover and let stand 1 hour.
  4. Heat water and beans to boil, reduce heat, cover and simmer 1 hour.
  5. Don't boil or possibly beans will burst.
  6. Add in peas and rice.
  7. Heat to boiling; reduce heat, cover and simmer about 20 min or possibly till beans and rice are tender.
  8. Trim fat from beef, cut into 1/2 cubes.
  9. Cook onion in oil in 10 inch skillet over medium heat, stirring frequently, till tender.
  10. Add in beef, brown well.
  11. Place meat, onions, tomatoes and salt into Dutch oven with other ingredients.
  12. Simmer 1 to 2 hrs till beef is tender.
