Baked Pierogy Parmigiana

  1. Place pierogies in boiling water until hot, 3-4 minutes; drain.
  2. Saute onions, mushroms and garlic in oil until soft.
  3. Add marinara sauce, salt and pepper to onion mixture.
  4. Heat to boiling and cook 5 minutes.
  5. In a 2 quart casserole, arrange pierogies and onion mixture.
  6. Cover and bake at 350 degrees for 30 minutes.
  7. Sprinkle with parmesan cheese, if desired.
