Quick Doughnuts with Anise Sugar and Orange Marmalade

  1. Heat 3 inches of oil to 325F in a countertop electric fryer or deep pot.
  2. If you dont have a deep-fry thermometer, a good way to test if the oil is hot enough is to stick the end of a wooden spoon or chopstick in it.
  3. If bubbles circle around the end, then youre good to go.
  4. In a medium bowl, combine the sugar and anise seed.
  5. Open the tubes of biscuits and pull the individual pieces apart to give you 16 doughnuts.
  6. Fry a couple of pieces at a time, keeping an eye on maintaining the oil temperature.
  7. As the doughnuts puff up and rise to the surface, flip them over with a slotted spoon, skimmer, or chopsticks.
  8. They should take roughly 2 minutes on each side.
  9. Carefully remove the doughnuts from the oil and transfer directly into the bowl of anise sugar, tossing to coat evenly.
  10. Fit a small pastry bag with a large tip and fill with the orange marmalade.
  11. Poke a hole into the middle of each doughnut with the tip and pipe the marmalade inside the doughnuts to fill.
  12. These are best served warm.
