Breakfast Kugel Recipe
- 1 lb lasagna noodles
- 24 ounce lowfat cottage cheese
- 1 tsp vanilla
- 1/4 tsp salt
- 5 x tart apples
- 1 tsp cinnamon
- 2 c. raisins optional
- 2 c. applesauce no sugar added
- 1 c. lowfat Cheddar cheese grated
- Peel and thinly slice the apples.
- Prepare the pasta according to package directions; drain and rinse it in cool water.
- Meanwhile, in a food processor or possibly blender, puree the cottage cheese and fold in the vanilla and salt.
- In two separate bowls, mix the apples with thecinnamon and mix the raisins into the applesauce.
- Spray a 9-by-13-inch baking dish with vegetable cooking spray.
- Starting with the lasagna noodles, layer the applesauce mix, cottage cheese mix and apples.
- End with a layer of noodles and top withCheddar cheese.
- Bake at 350F for 45 min or possibly till the apples are tender and the cheese is bubbly.
- SERVE the kugel warm or possibly cool.
