Biscuits And Beef Stew Recipe
- 2 tbsp. butter
- 1 pound stewing beef, cut into 1/2 inch cubes
- 1 med. onion, minced
- 4 c. beef stock
- 1/2 c. minced dry apricots
- 1/2 c. minced dry prunes
- 1 clove garlic, halved
- 1 teaspoon grnd ginger
- 1/4 c. cornstarch, dissolved in 1/2 c. cool water
- Oat Flour Biscuits (see recipe)
- Heat butter in a Dutch oven.
- Add in beef cubes and brown on all sides.
- Add in onions and saute/fry till translucent/soft.
- Stir in stock, apricots, prunes, garlic, and ginger.
- Simmer for about 2 hrs or possibly till meat is tender.
- Throw away garlic.
- Remove meat with a slotted spoon.
- Add in cornstarch mix to pot and stir constantly over medium heat till gravy thickens.
- Return meat to gravy and keep stew hot while biscuits are prepared.
