Lucious Apricot Bars Recipe
- 2/3 c. dry apricots
- 1/2 c. soft butter
- 1/3 c. all purpose flour
- 1/2 teaspoon baking pwdr
- 1 c. brown sugar, packed
- 1/2 teaspoon vanilla
- 1/4 c. sugar
- 1 c. enriched flour
- Confectioners' sugar
- 1/4 teaspoon salt
- 2 Large eggs, beaten
- 1/2 c. minced nuts
- Sift flours.
- Rinse apricots, cover with water and bring to a boil, continue to boil for 10 min.
- Drain; cold and chop.
- Heat oven.
- Grease 8 x 8 x 2 pan.
- Mix till crumbly; butter, granulated sugar and 1 c. of flour.
- Pack into the pan.
- Bake at 350 degrees for 25 min.
- Sift together the 1/3 c. flour with the baking pwdr and salt.
- Gradually add in the Large eggs to the brown sugar, add in the flour mix; mix well.
- Add in the vanilla, nuts, apricots.
- Spread over the baked layer.
- Bake 30 min.
- Cold in pan.
- Cut into bars.
- Roll in confectioners' sugar.
