Home Fries My Version
- 4 medium russet potatos, peeled and cut into 1inche cubes
- 4 breakfast sausage
- 1 onion, chopped
- 3 clove of garlic, chopped
- 2 medium anaheim peppers, chopped or pepper you like
- 4 slice of bacon
- 1 tsp cajun seasoning
- 1 tsp black pepper and salt to taste
- 2 tbsp canola oil
- 1 tbsp butter
- 1/4 cup grated parmesan cheese
- Preheat oven to 450
- In a large oven proof skillet heat 1tablespoon oil, add sausage and brown on all sides, add butter, onion, garlic and chopped pepper, and cajun seasoning, pepper and salt if needed, cook until vegetables are tender and sausage is cooked through, remove to a plate and set aside.
- Heat last Tablespoon of oil in same skillet, add cubed raw potatoes and stir to coat with oil, lay bacon on top of potatos, put in the pre heated oven and roast 20 to 30 minutes turning a few times until golden and cooked through.
- Remove from oven, take bacon slices out and chop.
- Cut reserved sausage into slices, add sausage, cooked onions garlic and peppers to potatoes.
- Sprinkle with parmesan cheese and chopped bacon, return to oven just to heat through.
- Serve hot.
