Roasted Fingerlings with Capers & Dill

  1. Preheat oven to 400 F. Wash and scrub the potatoes and place them in a bowl.
  2. Add olive oil and mix the potatoes until they are coated.
  3. Place potatoes on a rimmed baking sheet and sprinkle with ground pepper.
  4. Bake in the oven for 30 minutes or until potatoes are cooked through.
  5. Flip the potatoes halfway through.
  6. Remove from oven.
  7. Add potatoes into a bowl and add capers and dill, mix well.
  8. Serve warm or cold.
