Roasted Fingerlings with Capers & Dill
- 2 pounds Fingerling Potatoes
- 3 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Ground Pepper
- 2 Tablespoons Capers, Add A Pinch Of The Juice Form The Jar
- 2 Tablespoons Dill Fresh, Chopped
- Preheat oven to 400 F. Wash and scrub the potatoes and place them in a bowl.
- Add olive oil and mix the potatoes until they are coated.
- Place potatoes on a rimmed baking sheet and sprinkle with ground pepper.
- Bake in the oven for 30 minutes or until potatoes are cooked through.
- Flip the potatoes halfway through.
- Remove from oven.
- Add potatoes into a bowl and add capers and dill, mix well.
- Serve warm or cold.
