Lemony Smashed Potatoes

  1. Place a steamer basket in a large saucepan with 2 inches simmering water.
  2. Add potatoes; cover and cook until easily pierced with the tip of a paring knife, about 25 minutes.
  3. Lightly smash potatoes, toss with oil and lemon zest, and season with salt and pepper.
  4. Serve warm.
