Sue's Shredded Carrot Salad

  1. For the dressing, in a medium bowl, whisk together juice, honey and salt.
  2. Drizzle in oil, whisking constantly until combined well; set aside.
  3. In a medium bowl, combine carrot, apple, parsley and raisins, if using.
  4. Toss with dressing and serve.
  5. Can be made ahead.
  6. Cover and refrigerate up to 12 hours.
