Cajun Sole (Stuffed) Recipe

  1. Fillets should be about 1/4 inch thick x 10 inches long.
  2. In 1 qt casserole combine minced pepper, onions, butter, parsley, cayenne, salt and pepper.
  3. Micro at High 2 to 3 minutes.
  4. Add in remaining ingredients except sole.
  5. Mix well.
  6. Spread 1/4 of this stuffing down center of each fillet.
  7. Roll up enclosing stuffing.
  8. Secure with wooden picks.
  9. Stand on end in 9 inch pie plate.
  10. Cover with plastic wrap.
  11. Micro at Medium-high for 8-10 minutes.
  12. Let stand, covered, for 3 min.
