Green Chili Pork

  1. Place tenderloin in a crock pot or Dutch oven.
  2. Pour enchilada sauce over tenderloin.
  3. Fill can with water and pour over tenderloin.
  4. Sprinkle top of tenderloin with coarsely ground black pepper.
  5. Cover with lid and cook.
  6. If cooking in a Dutch oven, place in the oven at 250F for 5 hours.
  7. If cooking in a crock pot, cook on low for 8 hours.
  8. Remove from vessel and shred with forks.
  9. Serve on tortillas with shredded cheese as a burrito, on nachos, or as an appetizer with Black Pepper & Olive Oil Triscuits.
