Grilled Chicken Pita
- 1 chicken breast; butterflied
- 1 pita
- 2 tbsp hummus
- 1/2 tomato
- 1/2 cucumber
- 2 tbsp tahini
- 1 Tzatziki
- 1 feta cheese
- 1 salt and pepper
- 1 dash paprika
- 1 dash onion powder
- 1 dash garlic powder
- 1 dash turmeric
- 1 dash dried dill
- 1 drizzle vegetable oil
- Toss breast in vegetable oil.
- Season breast with dried spices.
- Grill each side approximately 5-10 minutes each side or until chicken reaches 165 degrees .
- Small dice tomato and cucumber.
- Toss with tahini.
- Set aside.
- Cut open pita.
- Season with olive oil, salt, and pepper and grill very briefly if desired.
- Spread hummus in pita.
- Add sliced or diced chicken breast.
- Add veggie mix, feta, and tzatziki.
- Variations: Fresh dill, basil, tarragon, parsley, chervil, oregano, thyme, caramelized red onions, rice, pickled red cabbage.
