Grilled Chicken Pita

  1. Toss breast in vegetable oil.
  2. Season breast with dried spices.
  3. Grill each side approximately 5-10 minutes each side or until chicken reaches 165 degrees .
  4. Small dice tomato and cucumber.
  5. Toss with tahini.
  6. Set aside.
  7. Cut open pita.
  8. Season with olive oil, salt, and pepper and grill very briefly if desired.
  9. Spread hummus in pita.
  10. Add sliced or diced chicken breast.
  11. Add veggie mix, feta, and tzatziki.
  12. Variations: Fresh dill, basil, tarragon, parsley, chervil, oregano, thyme, caramelized red onions, rice, pickled red cabbage.
