Moetta's Cornbread

  1. Place oven on broil highest heat.
  2. Mix all batter ingredients at once for 2 minutes by hand.
  3. Add 1/4 cup (60 ml) bacon drippings to large cast iron skillet.
  4. Place pan in oven and heat until smoking.
  5. Remove smoking pan from oven and add 1/4 cup (60 ml) of dry cornmeal.
  6. Stir pan to brown cornmeal.
  7. Add batter evenly around in a circle.
  8. Place pan back in oven immediately.
  9. Change oven setting to bake at 350 degrees (175 C.).
  10. Bake 20-25 min until center has risen and tooth pick comes out clean.
