Curried Shrimp With Tomatoes & Spinach
- 100 g shrimp
- 12 cup vegetable broth or 12 cup water
- 2 tomatoes, chopped
- 1 tablespoon minced onion
- 1 garlic clove, crushed and minced
- 2 cups fresh spinach
- 18 teaspoon curry (to taste)
- 18 teaspoon onion powder
- 18 teaspoon garlic powder
- 1 pinch allspice
- 1 pinch stevia (to taste)
- Saute the shrimp with the onion, tomatoes and garlic for about 3 minutes or until.
- cooked.
- Add vegetable broth, curry and stevia.
- Add garlic and onion.
- powder & allspice to thicken the mixture.
- Cook for 5-10 minutes on medium heat.
- Add water or reduce liquid until desired consistency is reached.
- Add spinach cook for a minute and serve.
- Makes 1 serving (1 protein, 1 vegetable).
