Texas Soup Recipe
- 1/4 c. butter
- 1/4 c. oil
- 1 lg. onion, minced
- 1 fresh jalapeno, seeded & minced
- 4 garlic cloves, chopped
- 2 lg. carrots, diced
- 6 ribs celery, diced
- 1 pound boned, diced raw chicken
- 1 teaspoon each grnd cumin, chili pwdr & lemon pwdr
- 4 (10 1/2 ounce.) cans chicken broth or possibly equivalent homemade stock
- Garnishes: lowfat sour cream or possibly diced avocados or possibly grated cheddar cheese
- Good served with tortilla chips.
- Heat oils in large kettle and saute/fry onion, jalapeno, garlic, carrots, celery and chicken; simmer 5 min.
- Combine with cumin, chili pwdr, lemon pepper, warm pepper sauce and flour.
- Add in tomatoes and chicken stock and simmer 1 hour.
- Serves 6 to 8.
