Calico Pickles

  1. Combine vegetables in a large bowl.
  2. Dissolve salt in water and pour over vegetables.
  3. Soak for 15 to 18 hours in a cool place.
  4. Drain.
  5. In a large kettle, mix sugar, spices, and vinegar.
  6. Bring to a boil and boil for 3 to 4 minutes.
  7. Add vegetables and simmer 5 to 7 minutes.
  8. Pack hot into eight pint jars, leaving 1/4 inch headspace.
  9. Remove air bubbles.
  10. Adjust caps; process 15 minutes in boiling water bath.
