Patriotic Poke Cake

  1. Place cake layers, top sides up, in 2 clean 9-inch round cake pans.
  2. Pierce cake with large fork at 1/2-inch intervals.
  3. Stir 1 cup of the boiling water into red and Berry Blue gelatin in separate bowls 2 minutes until completely dissolved.
  4. Carefully pour red gelatin over 1 cake layer and Berry Blue gelatin over second cake layer.
  5. Refrigerate 3 hours.
  6. Dip 1 cake pan in warm water 10 seconds; unmold onto serving plate.
  7. Spread with about 1 cup of the whipped topping.
  8. Unmold second cake layer; carefully place on first cake layer.
  9. Frost top and sides of cake with remaining whipped topping.
  10. Refrigerate 1 hour or until ready to serve.
  11. Garnish with fresh fruit, if desired.
  12. Store leftover cake in refrigerator.
