Spaghetti With Handfuls of Herbs
- 1-13 cup Fresh Bread Crumbs
- 3 Tablespoons Olive Oil
- 1 pound Angel Hair Pasta Or Spaghetti
- 13 cups Olive Oil
- 3/4 cups Melted Butter
- 3 cups Fresh Herbs (tarragon, Chives, Parsley, Thyme, Basil, Coriander, Etc.)
- Grated Fresh Parmesan Or Curls To Taste
- Saute the bread crumbs in 3 T oil over moderate heat.
- Set aside.
- Cook pasta.
- While it is cooking, combine the remaining olive oil, melted butter, shallots and herbs in a large serving bowl.
- When pasta is cooked and drained, add to herb mixture.
- Stir gently, then sprinkle with bread crumbs and Parmesan.
- I prefer to use a 9 x 13 container so that the bread crumbs and cheese are more widely spread.
- You can keep warm for 15-20 minutes in a 200 degree oven or warming drawer without ruining it!
