Quick & Easy Vegetarian Black Bean Chili
- 3 (15 ounce) cans black beans
- 1 large sweet onion, chopped
- 1 (12 ounce) package veggie crumbles, I use Morningstar
- 2 tablespoons vegetable oil
- 4 teaspoons chili powder
- 1 teaspoon ground cumin
- 12 teaspoon pepper
- 14 teaspoon salt
- 1 (14 ounce) can low sodium chicken broth
- 2 (14 1/2 ounce) cans Rotel Tomatoes, original
- 12 cup dark beer
- 3 tablespoons hickory flavored barbecue sauce
- 14 cup brown sugar
- 1 (6 ounce) can tomato paste
- Rinse and drain 2 cans black beans; do not drain third can.
- Saute chopped onion and burger crumbles in hot oil in a large dutch oven over medium heat; about 6 minutes.
- Stir in chili powder, cumin, salt and pepper; saute one minute.
- Stir in drained and undrained beans, chicken broth, rotel tomatoes, beer, bbq sauce, brown sugar and tomato paste; reduce heat to low and simmer for 10 - 15 minutes.
