Homemade Macaroni Salad
- 1 box macaroni noodles, drained 12 to 16 oz.
- 3 boiled eggs, sliced
- 2 cup mayonnaise
- 3 tbsp red wine vinegar
- 2 tbsp pickle relish
- 1 tbsp celery seed
- 1/4 cup sugar
- 2 tbsp brown spice mustard
- 2 carrots, grated
- 1 medium onion, chopped
- 2 stalks of celery, chopped
- 1/4 cup green pepper, chopped
- dash of paprika
- Cook macaroni according to package directions.
- Drained and rinse with cold water to cool the noodles.
- TIP: Cook your eggs with the macaroni.
- In a large bowl, mix together mayonnaise, red wine vinegar, sugar, mustard, celery seeds, pickle relish, salt and black pepper.
- Add celery, carrots, onion, and green peppers to mayo mixture.
- Add macaroni noodles and eggs.
- Stir gently.
- Keep cold until ready to serve.
- Sprinkle paprika on top for extra color.
