Chilled spicy cucumber avocado soup
- 1 english cucumber peeled and cubed
- 3 avocados peeled pitted and cubed
- 1 garlic clove minced
- 3 tbsp fresh lemon juice
- 1/2 cup sour cream
- 1 jalapeno seeded and chopped
- 3 stalks green onions sliced
- 1 tsp olive oil
- 1/2 tsp pepper
- 1 1/2 tsp salt
- 1 tsp red pepper sauce such as franks brand
- 1 cup ice water
- Combine all ingredients EXCEPT ice water in food possessor or blender until smooth and creamy
- Add ice water starting with just 1/4 cup and blending then checking for desired thickness
- Chill at lest 1 hour garnish with thin sliced cucumber, jalapeno, green onions and sour cream.
- Add additional salt, pepper and hot sauce to taste at table
