Southwestern Corn Dressing (Stuffing)
- 6 cups cornbread, prepared and crumbled
- 1 (17 ounce) can cream-style corn
- 2 (4 ounce) cans green chilies, chopped (or one can green chilies and 1-3 tbsp. jalapeno pepper, seeded and chopped)
- 34 cup colby-monterey jack cheese, shredded
- 12 cup green onion, chopped
- 12 cup red bell pepper, chopped
- 1 tablespoon cilantro, chopped
- 1 egg, beaten
- salt & freshly ground black pepper
- Combine in a large bowl corn, chilies, cheese, onion, red bell pepper, cilantro, egg, and salt/pepper to taste.
- Mix well.
- Add cornbread; toss to mix.
- Bake in an ungreased 2-qt.
- casserole in a 325 degree oven for 45 to 60 minutes or until golden brown.
