Easy and Awesome Nachos
- 2 lb ground beef
- 1 packages tortilla chips
- 2 jars Ragu double cheddar pasta sauce
- 1 can (or more, to taste) rotel chiles and tomatoes
- 2 envelope Taco Bell (or your favorite brand) taco seasoning
- 1 black olives
- 1 chopped green onions
- 1 sour cream
- 1 hot sauce/taco sauce
- Brown ground beef, adding salt and pepper to taste.
- Drain fat.
- Add taco seasonings as per package directions.
- While seasoned beef is simmering, pour jars of cheese sauce into saucepan.
- (I usually swirl a bit of milk in jars to get remainder of sauce out.)
- Add rotel to cheese sauce.
- Draining rotel will leave sauce thicker, not draining will make sauce a bit thinner, but spicier.
- Stir sauce and heat over low /medium heat, stirring occasionally so sauce doesn't stick or scorch, until heated through.
- Once both beef and cheese are done, it's time to build individual plates.
- Place a layer of chips on a plate, add seasoned beef sprinkled evenly over chips.
- Ladle cheese sauce over all, as much or as little as each person cares for.
- Add optional toppings as desired.
- Enjoy!
- This recipe is simple yet versatile.
- I have also used chicken, shrimp, imitation crab, even shredded pork.
- The only limit to the ingredients are your imagination.
