Beef Tenderloin On Mustard Croutons Recipe
- 2 x thick beef tenderloin steaks
- 2 x bacon strips, partially cooked
- 2 slc bread
- 2 tsp butter
- 1 tsp whole-grain mustard oil for frying MUSHROOM FILLING
- 1 Tbsp. butter
- 4 x green onions, minced
- 3/4 c. minced mushrooms
- 1 clv garlic, crushed
- 2 Tbsp. stale bread crumbs
- 1 tsp grated lemon rind
- Cut a pocket in the side of each steak, fill with Mushroom Filling.
- Wrap each steak in bacon, secure with toothpick.
- Spread bread with combined butter and mustard, toast on oven tray in 375 degrees oven about 10 min.
- Fry steaks quickly in a little oil till browned well on both sides, reduce heat slightly, cook till done as desired.
- Remove toothpick, serve steak on the croutons.
- Mushroom Filling: Heat butter in pan, add in green onions, mushrooms, and garlic.
- Cook 5 min, stirring constantly.
- Stir in bread crumbs and lemon rind.
