Chipotle Ketchup
- 1/4 cup ketchup
- 1/2 teaspoon finely chopped canned chipotle chiles in adobo, plus 1 teaspoon of the sauce
- 1/4 teaspoon ground cumin
- 1 tablespoon fresh lime juice
- Combine all the ingredients in a small saucepan and bring to a simmer over medium heat.
- Cook, stirring often, until the sauce thickens, 2 to 4 minutes.
- Remove from the heat and let cool to room temperature.
- This will keep, tightly covered, in the refrigerator up to 1 week.
