Australian Barbecued Chicken
- 3 lb. chicken pieces
- 1/3 cup flour
- 2 tsp. salt
- 1/3 cup oil
- 1/2 cup finely diced onion
- 1/2 cup finely diced celery
- 1/2 cup finely diced green pepper
- 1 cup ketchup
- 1 cup Coca-Cola
- 2 tbsp. Worcestershire sauce
- 1 tbsp. salt
- 1/2 tsp. hickory smoked salt
- 1/2 tsp. basil leaves
- 1/2 tsp. chili powder
- 1/8 tsp. pepper
- Rinse chicken pieces and pat dry.
- Mix the flour with 2 tsp.
- salt; coat the chicken pieces.
- In a skillet, heat the oil and brown chicken pieces on all sides.
- Place the pieces in a 3 quart casserole dish and discard drippings.
- Combine tha rest of the ingredients, mixing well.
- Spoon sauce over chicken, covering all the pieces.
- Cover and bake at 350F for about 1-1/4 hours, or until chicken is tender.
- If desired, serve chicken and sauce on hot cooked rice.
