Elegant Roast Chicken Any Night of the Week

  1. Preheat oven to 425.
  2. Rinse chicken under cold water and pat dry.
  3. Cut celery stalks in half and lay flat in the bottom of a roasting pan.
  4. This creates the baking rack for your chicken.
  5. Place sliced head of garlic inside the chicken.
  6. Squeeze lemons and place inside the chicken.
  7. Tuck the wings of the chicken under to prevent burning.
  8. Pour olive oil over chicken and make sure to cover all surfaces.
  9. Salt and pepper the outside of the chicken.
  10. Pour white wine in the bottom of roasting pan and bake uncovered for 1 1/2 to 2 hours.
