Lamb and Lentil Soup
- 2 tablespoons olive oil
- 1 lb ground lamb
- 4 garlic cloves, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 onion, chopped
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- In large pot, saute ground lamb until no longer pink.
- Add garlic, celery, carrots and onion; saute until softened, about 6 minutes.
- Add curry powder, cumin, salt and pepper; saute for 1 minute.
- Add lentils, tomatoes with their juice and stock; bring to a boil.
- Reduce heat and simmer until lentils are just tender, about 45 minutes.
