Lamb and Lentil Soup

  1. In large pot, saute ground lamb until no longer pink.
  2. Add garlic, celery, carrots and onion; saute until softened, about 6 minutes.
  3. Add curry powder, cumin, salt and pepper; saute for 1 minute.
  4. Add lentils, tomatoes with their juice and stock; bring to a boil.
  5. Reduce heat and simmer until lentils are just tender, about 45 minutes.
