Mango Chile Dipping Sauce
- 1 large ripe mango, peeled and diced
- 3 cups rice vinegar
- 4 cups sugar
- 12 cup finely diced red bell pepper
- 12 cup finely diced red onion
- 1 tablespoon chopped fresh ginger
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped of fresh mint
- 1 teaspoon sambal oelek
- Place the mango in a food processor or blender and puree, adding a small amount of water if necessary for smoothness.
- Measure out 3/4 cup of the puree.
- Combine the vinegar and sugar in a saucepan over medium high heat and bring to a boil.
- Stir to dissolve the sugar and cook for 30 to 40 minutes, until the mixture is reduced and syrupy.
- Add the bell pepper, onion, ginger, cilantro, mint, and sambal oelek to the syrup.
- Stir well and remove from heat to cool.
- Stir in the mango puree.
