Light Vegetable Broth

  1. Place all the ingredients in a large soup pot.
  2. Bring to a simmer, then simmer gently, covered over low heat for 40-45 minutes, or until the vegetables are quite tender.
  3. Strain the stock through 3 layers of cheesecloth.
