Chicken Roll Ups With Mandarin Sauce Recipe

  1. Place oven rack in upper third of oven.
  2. Preheat oven to very warm (450 degrees).
  3. Lightly spray 12x8x2 inch (2 qt) baking dish with non-stick cooking spray.
  4. Brush one side of each breast with 1/2 tsp.
  5. of the sesame oil.
  6. Sprinkle same side equally with 1/2 tsp.
  7. of the rosemary, the salt and pepper.
  8. Place 1/4 of the beans on each cutlet and roll up, using fingers to hold beans inside.
  9. Place roll-ups, seam-side down, in prepared dish.
  10. Lightly brush roll-ups with remaining oil.
  11. Sprinkle with crumbs and remaining rosemary.
  12. Bake in preheated very warm oven for 15 min.
  13. Remove the roll-ups from the oven and let stand till ready to serve.
  14. Meanwhile combine orange juice and cornstarch in small saucepan; mix till well blended.
  15. Bring to boiling over medium heat and cook, stirring 2 to 3 min till thickened.
  16. Stir in oranges and heat through.
  17. Stir in lemon juice.
  18. Just before serving slice roll-ups into 1/2 inch thick pcs.
  19. Serve over rice (yellow) and top with sauce.
  20. Can substitute fresh for 1 package frzn whole green beans, thawed and liquid removed.
