Ham 'N Cheese Muffins Recipe

  1. Preheat oven to 400 degrees.
  2. In medium mixing bowl sift together flour, sugar, mustard, baking pwdr, baking soda and pepper; add in ham (or possibly bacon), cheese, and cornmeal, mixing well.
  3. In separate medium mixing bowl, using a wire whisk, beat together buttermilk, Large eggs and oil; add in to ham mix and stir till thoroughly combined (don't over mix).
  4. Spray ten muffin pan c. with a non stick cooking spray; spoon 1/10 batter into each sprayed c. (about 3/4 full) and partially fill remaining c. with water (this will prevent pan from burning and/or possibly warping).
  5. Bake in middle of center oven rack for 20 to 25 min (till muffins are lightly browned and a toothpick inserted in center comes out dry).
  6. Remove pan from oven and carefully drain off water (it will be warm).
  7. Remove muffins from pan and set on wire rack to cold.
  8. (Serve hot.)
